Matcha Banana Bread

If you love classic banana bread but want to try something a little different, this Matcha Banana Bread is the perfect bake. A portion of the batter is whisked with earthy matcha powder, then swirled into the banana bread batter to create a beautiful green marbled loaf that's just as pretty as it is delicious. Every slice is soft, moist, and packed with sweet banana flavor, while the matcha adds a subtle earthy note that keeps the loaf from being overly sweet. The two flavors complement each other beautifully, making this an easy recipe that's a little unexpected without straying too far from the comforting banana bread you already know and love.

Instructions

  1. Preheat oven to 350°F 

  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.

  3. In a large bowl, mash the bananas. Add the melted butter and both sugars, then whisk until combined.

  4. Mix in egg and vanilla extract until fully combined.
  5. Fold in the flour mixture until combined.

  6. Separate 1 cup of the batter and whisk in the matcha.

  7. Pour the plain batter into a lightly greased loaf pan. Dollop the matcha batter over the top, then gently swirl the batters together using a butter knife.

  1. Place in the oven and bake for 40-45 minutes or until a toothpick comes out clean. 

    Allow the banana bread to cool for 15–20 minutes before slicing and serving. For the best flavor and texture, enjoy it the next day once the loaf has had time to rest.
