Add all ingredients except for ice water to a food processor. Pulse until butter is broken into pea size chunks
Slowly add ice water until the dough comes together in a ball.
Wrap in plastic wrap and refrigerate for 1 hour before rolling out.
Roll pie dough into a large, ⅛ inch rectangle. Cut into smaller, 3x4 inch rectangles.
Place pie dough rectangles onto a sheet tray.
Add dollops of jam to the centers of one of the rectangles.
Place an additional dough rectangle on top and seal the edges with a fork.
Using a fork, poke holes on top of dough.
Bake in the oven at 375° for 15-20 minutes.
In a small bowl combine sugar, milk, and matcha.
Drizzle icing on top of cooled Pop-Tarts and add sprinkles.
