Ingredients
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 3 oz pimentos, roughly chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dried oregano
  • 1 tbs chives, finely chopped
  • 4 oz white cheddar, shredded
  • 4 oz sharp shedder, shredded
  • 1 Jalapeño (for topping)
Instructions

    In a medium bowl, mix all ingredients together until evenly combined.

    Add pimento cheese dip to the center of a piece of plastic wrap. Tightly wrap the dip and shape it into a ball.

    Using a long piece of kitchen twine, wrap and tie the pimento cheese ball tightly (should be 4 times) until it resembles a pumpkin.

    Refrigerate for 4-6 hours

    Unwrap the pimento cheese, top it with the stem of a jalapeño, and serve with chips or crackers.
